At Chateau Astrelus, the emphasis of our wine making is on quality. To acheive this we limit our yields by removing some of the buds before the new growth. As the harvest approaches, the grapes are closely monitored to ensure their ripeness and rich flavour. They are picked in the cool early morning temperatures and put under cold maceration for 3 days. The wine is fermented in stainless steel tanks using the natural yeasts present on the skins. Small lot vinification allows us to choose specific parcels to vinify separately: an important factor in maximising the quality of our wines.
